Aji Pique with Cherry-Tomatoes | Colombian Hot Pepper Salsa

Aji PiqueThis is an adopted version between the famous Colombian aji pique and the Mexican Pico de Gallo salsa.

This could be use as dressing on a salad or as any uses you give to the Mexican salsa. Any way you want to call it, it is delicious and I hope that you will make it and enjoy it.

We use this aji pique in Colombia with our original empanadas (turnover) and tamales. It is the perfect companion for meats, soups and many more dishes.

I prepare this version of aji pique almost every weekend, as I use it to add zest to any meals. It is actually very easy to prepare.

And you know what, if I have any left over, I use it to make chicken fajitas. You only prepare the chicken, add the pique and you have the perfect meal!

Ingredients to make Aji Pique with Cherry Tomatoes

aji pique

1 box cherry Tomatoes

1 medium red onion

½ bunch green onion

½ bunch of cilantro

1 Jalapeño

1 Serrano chili

Salt

 

How to prepare – step by step- Ají Pique with cherry Tomatoes

Aji Pique

CUT the cherry tomatoes in quarters.

CHOP the onion. If you use a mandolin, it will make your job a lot easier and the chopped onion will be perfect

CHOP the green onion and cilantro in very tiny pieces.

REMOVE the seeds of all ajies (chili). Cut them in little pieces. You can add as mucho or as little as you would like. If you like it mild, do not add all of the ajies.

MIX all the ingredients and add salt to your taste.

PLACE   in the refrigerator until serving time.
