Colombian Coconut Rice Today I am bringing you our famous Coconut rice (With Titoté), in my opinion, is one of the most delicious dishes!

Every time I prepare this dish and give it to someone that is not familiar with Colombian cuisine, they absolutely love it! I hope that you will not be the exception!

This is the star dish in our Thanksgiving dinner. I have lived in the US for 30+ years and along with the Turkey, coconut rice is always in our Thanksgiving table.

I have adapted this recipe to our fast life of today. We don’t have time to make as our mothers used to by shredding the actual coconut, extract the milk etc. Now days coconut milk that you find in the grocery stores are as good as the actual coconut one. One of my favorites is GOYA brand. It has more liquid and it is easier to utilize on this type of coconut rice with the oil and Titoté (Titoté is the caramelized leavings created as a result of cooking coconut milk for about 30 minutes) This titote is what gives coconut rice that distinct flavor!

I don’t want to scare you, but you must be patient t in order to make coconut rice.  As I mentioned before, in order to obtain the titote, you need to cook the coconut milk for at least 30 minutes. The good news is that the end result is a fantastic dish that everyone will love.

Let’s start with our Colombian Coconut rice with Titoté!

Ingredients Colombian Coconut Rice with Titoté

Yield: Serves 6-8

2 cans coconut milk

2 cups uncooked long or medium grain rice

3 ½ Cups of water

1 tablespoon coconut oil

3 tablespoons of brown sugar

3 tablespoons of white sugar

1 ½ teaspoons of salt

½ cup raisins

How to cook coconut rice with titoté?

Colombian Coconut Rice

Heat coconut milk in a 2 quart heavy-bottomed saucepan

Cook over medium heat until simmering and cook, stirring frequently with a wooden spoon.

Reduce to low heat and continue to cook, stirring and scraping constantly until coconut oil breaks out and coconut solids cook down to a deep, dark brown, about 20 minutes total. 

Pre heat oven to 350

ADD coconut oil

ADD raisins and let them cook for a couple of minutes

ADD rice and water and cook until water starts bubbling

COVER the rice

Place in oven and cook for about 20 minutes

Uncover the pot and stir rice and let cook for another 10 minutes

ADD the sugar, salt and add ½ cup water, stir a little more, cover and let it cook for 15 minutes.

REMOVE from heat, let it rest and then fluff with a fork and serve.

As you notice, I add the sugar and salt after the rice has opened. If you add this at the beginning, the rice would not be as fluffy as it should
