Recipe: Caprese Salad This salad is one of the simplest and most delicious of salads. It requires only the right ingredients. It should be made only with local vine-ripened tomatoes that are red, juicy and flavorful but not overly soft. The next ingredient should be truly fragrant, flavorful young basil. Next essential ingredient is good quality fresh, moist mozzarella cheese. Finally, you need genuine extra-virgin olive oil and balsamic vinegar. I love to prepare this as a side dish for dinner. Very easy and ready in two minutes!

  • ¼ pound fresh mozzarella cheese sliced ¼-inch thick
  • 1 large vine-ripened tomato, sliced ¼-inch thick
  • 4-6 mini-tomatoes different colors: yellow, red, purple
  • ½ cup torn fresh basil leaves
  • Coarse salt to taste
  • Freshly-ground black pepper to taste
  • 3 tablespoons olive oil
  • 4 teaspoons balsamic vinegar
  1. In a circular design around the side of a serving plate, place the slices of the tomato topping them with the sliced mozzarella.
  2. CUT in half the mini-tomatoes and place in the middle of the plate.
  3. TEAR fresh basil leaves and sprinkle liberally over the slices. Add salt and freshly ground pepper to taste.
  4. DRIZZLE with top-quality extra-virgin olive oil and balsamic vinegar.
