How to cook Roast Pork LoinDuring the month of December, Roast Pork Loin is a very traditional dish in Colombia. The best way to cook a pork loin is roasted. If you are inviting guests at your house and want to cook something really special, follow my step by step recipe to prepare this spectacular roast pork loin! Just be aware that it takes a little time to prepare and to cook. So be prepared!

!!! Estimate how many guests are you having, as this delicious dish can go really fast! Make sure you estimate 3 servings per pound of pork loin!

With all the ingredients that I mention below, this recipe will for sure be a hit and the juices after roasting it will make it even tastier!

Ingredients to prepare Roast Pork Loin

Yield: Serves 6-8 [Estimate 3 servings per pound]

1 Pork loin of about 2 ½ pounds

1 tablespoon oregano

1 tablespoon red chili pepper

1 tablespoon thyme

½ tablespoon cloves

1 tablespoon cumin

1 tablespoon cinnamon

1 tablespoon pepper

1 tablespoon salt

2 tablespoon olive oil

2 cloves garlic, minced

1 piece of ginger, about an inch

1 tablespoon brown sugar

2 tablespoon Worcestershire sauce

1 beer (better if dark)

1 lemon peel

2 tablespoon mustard

MIX in a small bowl all dry ingredients, oregano, chili pepper, thyme, pepper, cloves, cinnamon, cumin, salt and pepper.  

RUB the meat with this mix and place in the refrigerator for at least 2 hours or overnight.

HEAT the oil in a large ovenproof skillet over high heat.

SEAR the meat until golden brown on all sides, about 2 to 3 minutes per side

MIX in the food processor, the garlic, ginger, brown sugar, Worcestershire sauce, lemon peel, mustard and half of the beer

STIR this mix over the meat

PREHEAT the oven to 350 degrees and bake for an hour and half.

ADD the mix of dry ingredients and the rest of the beer

ROAST the loin until an instant-read thermometer inserted into the center of the meat registers 140 to 160 degrees F.

TRANSFER the pork a cutting board and cover it loosely with foil while you make the sauce

CUT the pork loin and slice into 1/2-inch

STRAIN the sauce and scrape the bottom of the pan with a wooden spoon to loosen up any browned bits.

POUR this sauce to the pork loin.
