I was born near the Atlantic coast where is almost a daily occurrence to eat fish, but Alaskan salmon was that sophisticated fish that I wasn’t used to. When I first tried it a few years ago, I absolutely loved it and it is one of my favorites, albeit not of my husband. I still try to make it as often as I can, and when I tried this recipe that I am sharing with you today, he agreed with me. It is really good!

As I am always trying new recipes, I found this particular one with this creamy sauce of citrus juice and ginger that it has become as I mentioned previously, one of my family favorite.

The flavor of this sauce is unique as the mix of citrus juices, yogurt and spices, gives it that extraordinary zest. I bet you are going to love this Baked Salmon with Citrus Juice and Ginger. The recipe is simple! Enjoy it!!

Ingredients Baked Salmon with Citrus Juice and Ginger

Baked Salmon

Ingredients for the Baked Salmon

2 Salmon filets of about 4 oz. each

2 lemons

1 teaspoon of crushed red pepper

1 teaspoon of pepper

1 teaspoon salt

1 teaspoon turmeric

Ingredients for the Creamy Sauce with Citrus Juice and Ginger
2 pieces of about 1/2 inch of fresh ginger
1 cup of orange juice

1 tablespoon of orange peel

1 lemon juice and its lemon peel
2 tablespoons stevia
2 tablespoons Greek yogurt

½ teaspoon cornstarch

¼ teaspoon salt

1 tablespoon yellow hot pepper paste (optional – Do not add if you don’t like spicy food)

½ teaspoon pepper
2 tablespoon butter without salt

How to Cook Baked Salmon Step By Step

Baked Salmon
PLACE a layer of the sliced lemon on the aluminum paper

 

FOR THE BAKED SALMON
PREHEAT oven at 350 degrees

PLACE one sheet of aluminum paper

CUT lemon into slices

PLACE a layer of the sliced lemon on the aluminum paper

ADD the salmon over the lemon slices

SPRINKLE the spices, pepper, turmeric, crushed red pepper and salt over salmon turmeric

FOLD the aluminum paper over the salmon

BAKE for 20 minutes or until flaky. Do not overcook!

 

FOR THE CREAMY SAUCE OF CITRUS JUICES AND GINGER

PEEL the ginger into thin slices

SQUEEZE the orange and lemon juices in a small bowl.

ADD ginger, orange and lemon peel and stevia
BRING to a boil over medium heat

ADD the yellow hot pepper paste (if using)

BOIL for about 10-12 minutes or until the orange and lemon juices have reduced to about ½ cup REMOVE ginger slices with a fork and discard them

REMOVE from heat and set aside
MIX half of this sauce with the cornstarch and salt

ADD the butter to the other half of the sauce and stir until melted and well mixed.

MIX the two sauces into one
PLACE again at medium heat until boiling point

REMOVE from heat and add the Greek yogurt, mixing until well incorporated

An interesting thing about salmon is that when you cook it, it will be moist and will preserve its own juices. In the center, it should maintain the original color as when raw, in other words, bright orange.
