Hogao is a mix of various stir-fry vegetables and it is considered a very important seasoning of our gourmet cooking. There is nothing like this mix of onions, garlic, tomato, cilantro and some other vegetables, stir-fried in a little bit of oil until they are transparent and aromatic.

The making of hogao is a very personal taste therefore we all have our special or preferred way of adding different ingredients. Some people like to add sweet pepper, bell pepper, minced carrots, celery and some even add chili pepper. Having said that, you can experiment with any of your favorite vegetables and seasonings. You can also add “Sazon Goya” that will add some special taste and color to the hogao.

Colombian hogao is usually served to accompany many of our daily dishes in Colombia like the famous Bandeja paisa, fried cassava, our arepas and patacones. We also utilize hogao as a base or seasoning to prepare many of our dishes, like to prepare baked spaghetti casserole or to prepare our delicious red beans. You can prepare this in advance, keep it in the fridge and add to any of you daily meals.

Some people call it “guise”or hogao, it is the same thing, you can use the term you prefer!

Hogao

Ingredients to prepare Hogao

1 chopped onion

2 fresh chopped tomatoes

3 clove garlic, mincedCooking Easy Meals

5 cup chopped scallions

1 green bell pepper

2 Stalks of celery finely chopped

3 tablespoons vegetable oil

1 teaspoon ground cumin

1 pack Sazon Goya with azafran

¼ cup chopped cilantro

2 Chile güero (optional)

Salt & Pepper to taste

How to cook Hogao?

HEAT the oil in in a large pan on medium heat.

ADD onion, celery and garlic, sauté about 5 minutes.

ADD the tomatoes, and lower heat to low. Cook for about 8 minutes.

ADD scallions, bell pepper and cilantro.

ADD chile güero (optional)

REDUCE the heat to low, and cook for 6-8 minutes more, stirring occasionally until the sauce has thickened.

ADD ground cumin, “Sazon Goya”, salt and pepper.

COOK gently for 2-3 minutes, stirring until softened.

CHECK and adjust the seasoning.
