Ingredients to Prepare Shrimp Casserole
2 tablespoon of Grapeseed Oil
1 yellow onion
2 Carrots
2 celery sticks
2 Garlic cloves
2 fresh tomatoes (or canned tomatoes)
1 jalapeño
1 cans (8 oz.) tomato sauce
1 cans (8 oz.) peas
½ cup red wine
2 bay leaves
3 tablespoons of ketchup
1 tablespoon chicken broth
Salt and pepper to taste
1 lb. frozen shrimp, peel
½ cup grated parmesan cheese
How to Cook The Shrimp Casserole – Step By Step
GRIND the onion in the food processor until very fine.
GRIND carrots in the food processor until very fine
GRIND celery in the food processor until very fine
CRUSH the garlic
PEEL and chop the tomatoes
CHOP jalapeno finely
HEAT a little bit of oil in a pan and stir fry the onion until transparent
ADD the garlic and continue frying
ADD carrot, celery, tomato and fry a few more minutes
ADD the spices, chicken broth, salt and pepper
ADD the canned tomato sauce, peas, bay leaf and wine
COOK at medium heat, whisking constantly, until all vegetable are tender, about 30 minutes.
ADD the shrimp and cook for only 5 minutes until they turned pink.
SPRINKLE jalapeño and parmesan cheese on top
Tips for the Shrimp Casserole
DO not overcook the shrimp, as if you do, they become hard. You only need 5 minutes or until the shrimp turns pink!
