Curry Chicken With Apple

Even if it sounds like a crazy combination: Chicken + Curry + Apple + Coconut milk, Don’t be afraid to try it, as it is a very delicious dish, and very easy to prepare. I first tried this recipe at a friends’ house. All I remember is that there was this delicious aroma throughout the house. After tasting her chicken recipe, I had to prepare my own version of it!

Ingredients
  

  • 1 Boneless/skinless chicken breast
  • 1 White onion
  • 1 Green apple
  • 1 Can coconut milk
  • 1 Piece of ginger about one inch.
  • 2 tablespoon of curry powder
  • 1 teaspoon turmeric
  • 2 tablespoon coconut oil
  • ¼ cup raisins
  • Salt & pepper to taste

Instructions
 

  • CUT the chicken breast in pieces of about half inch.
  • PEEL the apple and cut in pieces of about half inch.
  • USE the mandolin to cut the onion in very small pieces.
  • CRUSHED or GRATE Garlic
  • GRATE ginger
  • HEAT the coconut oil in a pan and grill chicken until cooked through, 5–7 minutes per side. Do not turn chicken until golden in each side
  • REMOVE the chicken and set aside. Add onion, garlic, ginger and apple to the same oil where you seal the chicken. Cook until tender.
  • ADD The chicken and sprinkle with the curry, turmeric, salt and pepper.
  • ADD coconut milk and raisins, and turn to medium heat, cover and cook for about 20 minutes, until tender.
  • Tips To Cook Curry Chicken With Apple And Coconut Milk
  • The flavor and sweetness of the coconut milk is the star of this recipe, not the curry, but if you are not fond of sweetness, you can use only half of the coconut milk and half water or chicken broth.
