Banana Bread, According to Wikipedia, banana is the tropical fruit most consumed in the world. Bananas grow in clusters of up to 100 bananas and each cluster can weights up to 50 kg. This is a fruit that turns yellow when ripe; it is sweet and rich in carbohydrates, potassium, and vitamin A and C. It is richer in calories than most fruits because of its high content of starch. There are many names all over the world that “banana” is known for, “platano”, banana, cambur, topocho o guineo. Where I come from, Barranquilla, Colombia is known as guineo!

Ingredients
  

  • ½ cup of oil
  • 1 cup of sugar
  • 2 eggs
  • 1 tablespoon lemon juice
  • 1 ½ cup of ripe mashed bananas about 3 bananas
  • 2 cups of flour
  • 3 tablespoon of baking powder
  • ½ tablespoon salt
  • 1 tablespoon vanilla
  • 1 cup chopped nuts

Instructions
 

  • PREHEAT oven to 350 degrees
  • BEAT oil and sugar in a deep bowl with electric mixer until creamy.
  • ADD eggs one by one and keep beating.
  • COMBINE in a separate bowl, the mashed bananas and the lemon juice and beat until creamy.
  • ADD the mashed banana mix to the oil and sugar mix
  • SIFT flour with the baking powder and salt.
  • ADD, vanilla.
  • ADD the flour and lastly the chopped nuts.
  • MIX well all ingredients.
  • GREASE the pan
  • POUR the mix into the pan and bake for 45 minutes until after inserting a toothpick and comes out clean.
  • REMOVE from oven and let it cool.
  • UNMOLD after it has cool down.
  • NOTE: This is a perfect recipe for a de 5 x 8 inches pan. I also bake this recipe in the mini cupcakes.
