Ingredients
  

  • 2 tablespoon of grapeseed oil
  • 1 yellow onion
  • 2 Carrots
  • 2 celery sticks
  • 2 Garlic cloves
  • 2 fresh tomatoes or canned tomatoes
  • 1 jalapeño
  • 1 cans 8 oz. tomato sauce
  • 1 cans 8 oz. peas
  • ½ cup red wine
  • 2 bay leaves
  • 3 tablespoons of ketchup
  • 1 tablespoon chicken broth
  • Salt and pepper to taste
  • 1 lb. frozen shrimp peel
  • ½ cup grated parmesan cheese

Instructions
 

  • GRIND the onion in the food processor until very fine.
  • GRIND carrots in the food processor until very fine
  • GRIND celery in the food processor until very fine
  • CRUSH the garlic
  • PEEL and chop the tomatoes
  • CHOP jalapeno finely
  • HEAT a little bit of oil in a pan and stir fry the onion until transparent
  • ADD the garlic and continue frying
  • ADD carrot, celery, tomato and fry a few more minutes
  • ADD the spices, chicken broth, salt and pepper
  • ADD the canned tomato sauce, peas, bay leaf and wine
  • COOK at medium heat, whisking constantly, until all vegetable are tender, about 30 minutes.
  • ADD the shrimp and cook for only 5 minutes until they turned pink.
  • SPRINKLE jalapeño and parmesan cheese on top

  • DO not overcook the shrimp, as if you do, they become hard. You only need 5 minutes or until the shrimp turns pink!
