Easy And Delicious Vegetable Soup

I love to prepare this soup on Sundays and save it in containers that I can take for my office lunch 2 or 3 times a week. I like it so much that I don’t get tired of it. My mom makes fun of me when she sees me preparing the soup and goes: “There you go preparing your famous soup”. I hope you like it as much as I do. It is something easy, delicious and nutritive!

Equipment

  • 1 big pot

Ingredients
  

  • 1 tablespoon olive oil
  • 2 crushed garlic cloves
  • 2 scallions
  • 2-3 celery sticks
  • 1- 2 carrots
  • 1 bunch of cilantro
  • 4 mushrooms
  • 1 zucchini
  • ¼ of a cabbage
  • 2 -3 slices jalapeño
  • A handful of frozen fava beans or any other vegetable you prefer
  • 1 box of Organic Imagine Vegetable broth

Instructions
 

  • PLACE the tablespoon of oil in a big pot.
  • CRUSHED garlic and add to the pot.
  • SLICE scallions and add to the pot
  • CUT the celery and add to the pot
  • PEEL and sliced carrots and add to pot
  • SLICE Mushrooms and add to the pot
  • SLICE zucchini and add to the pot
  • CUT the cabbage and add to the pot
  • MIX Vegetable in the pot.
  • ADD the entire box of Vegetable broth
  • TURN on stove to high heat for a few minutes, when boiling add 2 -3 slices of jalapeño
  • TURN down to medium heat and cover for about 10-15 minutes. Add salt to taste!
  • Tips to make this delicious soup
  • You can add/delete any of the vegetables that I suggested. In fact, every time I make this soup, I use whatever I can find in my refrigerator. It is still delicious!
