Yes, with only two ingredients you can bake the most delicious flourless oatmeal cookies. These two ingredients are: rolled oats and bananas. These cookies are really the best of things. If you are looking for something sweet to eat it that is easy and delicious and without guilt, here is your answer: Flourless Oatmeal Cookies. The most important of this simple recipe is to use over ripe bananas. The good news is that you now have an excuse to let your bananas over ripe The good news is that this recipe contains no egg, no butter, no sugar, no flour or milk. They are good for people allergic to gluten!

- 2 ripe bananas
- 1 cup rolled oats
PREHEAT oven to 350 degrees
PEEL the bananas and place in a bowl
MASH the bananas with a fork until they have no lumps. For less than over ripe bananas, you can use a hand mixer.
ADD the rolled oats and mix well.
LIGHTLY grease a baking sheet (Or line with parchment paper).
USING a spoon, drop heaping tablespoons of the dough onto the sheets, spaced about 2 inches apart.
(Use more, if you want bigger cookies).
BAKE for 15-20 minutes. (A little longer if you prefer them slightly crisp.)
REMOVE from oven, let the cookies cool slightly on the baking sheets, and then transfer to racks to cool completely. Store them in a sealed container.
NOTE: I also use the mini- silicone molds in different shapes. They are ideal for individual cookies!

Variations: Use your imagination in regards to ingredients; you can add shredded coconut (one of my favorite ingredients!).
