It is a very simple stew with some vegetables like onions, carrots, celery simmering them for some time and enriched by the tomato flavor, using either fresh or canned tomatoes, and then adding some peas and lastly the shrimps! It is easier if you use a frozen, peel and ready to eat shrimp. It is really a very delicious casserole and I hope you enjoy it as much as we do! Take a break from the usual chicken and rice combo and make this creamy, hearty seafood casserole. Here is how you prepare this delicious dish:

  • 2 tablespoon of grapeseed oil
  • 1 yellow onion
  • 2 Carrots
  • 2 celery sticks
  • 2 Garlic cloves
  • 2 fresh tomatoes (or canned tomatoes)
  • 1 jalapeño
  • 1 cans (8 oz.) tomato sauce
  • 1 cans (8 oz.) peas
  • ½ cup red wine
  • 2 bay leaves
  • 3 tablespoons of ketchup
  • 1 tablespoon chicken broth
  • Salt and pepper to taste
  • 1 lb. frozen shrimp, peel
  • ½ cup grated parmesan cheese
  1. GRIND the onion in the food processor until very fine.
  2. GRIND carrots in the food processor until very fine
  3. GRIND celery in the food processor until very fine
  4. CRUSH the garlic
  5. PEEL and chop the tomatoes
  6. CHOP jalapeno finely
  7. HEAT a little bit of oil in a pan and stir fry the onion until transparent
  8. ADD the garlic and continue frying
  9. ADD carrot, celery, tomato and fry a few more minutes
  10. ADD the spices, chicken broth, salt and pepper
  11. ADD the canned tomato sauce, peas, bay leaf and wine
  12. COOK at medium heat, whisking constantly, until all vegetable are tender, about 30 minutes.
  13. ADD the shrimp and cook for only 5 minutes until they turned pink.
  14. SPRINKLE jalapeño and parmesan cheese on top
  15. Tips for the Shrimp Casserole
  16. DO not overcook the shrimp, as if you do, they become hard. You only need 5 minutes or until the shrimp turns pink!
